The quince tree belongs to the same family as the apple and the pear. Quince is the fruit of the quince tree (Cydonia oblonga). Piriform and bulky, it is cottony on the surface and, when ripe, it is yellow and very fragrant. The complete maturity of the quince requires a Mediterranean type climate with a long period of heat (Portugal, Greece, etc.). Otherwise, the quinces remain hard, astringent and acidic and can only be eaten after cooking. An old method left them exposed to frost to soften them and eliminate some tannin. It is a fruit tree that can live a long time (more than 50 years), but it is sometimes susceptible to fire blight, a very virulent bacterial disease. As soon as branches are affected in early summer, they should be removed and burned or removed from the area to avoid damage to the tree.
